Un dessert raffinato e scenografico da preparare in anticipo e in poco tempo. Si può giocare con i colori sostituendo le fragole con altri frutti estivi. Sarà un vero piacere portare in tavola questo dessert che va servito rigorosamente freddo.
INGREDIENTI
Savoiardi o pandispagna
Mascarpone 250 gr
Yogurt alle fragole 250 gr
Fragole 500 gr
Zucchero
Maraschino
Stampo a tronco di cono
Procedimento
Lavare le fragole, eliminare il picciolo e inserirle nel frullatore, aggiungendo zucchero quanto basta per ottenere una purea dolce. Unire a due vasetti di yogurt il mascarpone, due cucchiai di zucchero un po’ di purea di fragole, un cucchiaino di maraschino e fragole a pezzetti. Mescolare con cura il composto e tenere da parte. Rivestire uno stampo con carta forno, e allineare i savoiardi dopo averli inzuppati nella purea di fragole, ordinatamente,prima sulla parete dello stampo e poi sul fondo. Lasciare una piccola quantità di purea di fragole per decorare la charlotte. Versare metà della crema all’interno, disporre un altro strato di savoiardi e completare versando il resto della crema pareggiando la base con altri savoiardi. Chiudere con carta forno e sistemare nel freezer. Prima di servire lasciare qualche minuto a temperatura ambiente, rovesciare la charlotte su un piatto decorando a piacere. Vi suggerisco di prepararla in anticipo almeno 12 ore prima , in modo che abbia il tempo di solidificare ed una consistenza compatta al taglio.
